Instructions

  1. Make the Dough: Combine the all purpose flour, cake flour, sugar, and salt in a food processor and pulse once to blend. Add the cold butter cubes and shortening, then pulse until the mixture resembles coarse meal. Gradually add the ice water while pulsing until a soft dough ball forms. Remove the dough, lightly toss in flour, shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat Oven: Set your oven to 425°F (220°C) to preheat while preparing the rest of the galette.
  3. Prepare the Filling: In a small bowl, massage the vanilla bean seeds into the sugar until combined to infuse flavor. Add this vanilla sugar to the fresh berries. Then toss in the cornstarch and lemon juice, coating the berries evenly to help thicken the filling during baking.
  4. Roll Out Dough: Lightly flour your countertop and roll the chilled dough into a roughly 14×17 inch circle. Trim about 1 inch off the edges for another use. Transfer the dough carefully to a parchment-lined baking sheet.
