Ingredients
Scale
Sweet Potato Rounds
- 2 sweet potatoes (or yams), peeled and sliced into 1/4-inch rounds
Glaze
- 2 tablespoons butter
- 2 tablespoons maple syrup
- 1/2 teaspoon ground cinnamon
Toppings
- 12 large marshmallows, halved
- 24 pecans (or candied pecan halves)
Instructions
- Preheat and prepare pan: Preheat your oven to 400°F and lightly grease a sheet pan with nonstick cooking spray to prevent sticking.
- Make the glaze: In a small microwavable bowl, combine butter, maple syrup, and ground cinnamon. Microwave for about 30 seconds until melted, then stir until well combined.
- Coat the sweet potato rounds: Place the sweet potato slices in a large bowl, pour the melted butter mixture over them, and toss until all rounds are evenly coated with the glaze.
- Arrange on the baking sheet: Spread the coated sweet potato rounds evenly on the prepared sheet pan, spacing them out so they bake uniformly.
- Bake until tender: Bake in the preheated oven for approximately 20 minutes, or until the sweet potatoes are fork tender.
- Prepare for broiling: Remove the sweet potatoes from the oven and switch the oven setting to broil.
- Add marshmallows: Place a halved marshmallow on top of each sweet potato round.
- Broil the marshmallows: Broil the sweet potatoes with the marshmallows for 1-2 minutes, watching closely until the marshmallows are lightly toasted but not burnt.
- Add pecan topping and serve: As soon as they come out of the oven, press a pecan half into each toasted marshmallow. Serve immediately to enjoy the warm, gooey, and crunchy flavors.
Notes
- Use kitchen shears to halve the marshmallows easily and safely.
- If you prefer a crunchier texture, you can toast the pecans before adding them.
- Be vigilant during broiling as marshmallows can burn quickly.
- This dish is best served immediately to enjoy the contrast between warm sweet potatoes and gooey marshmallows.
- For a vegan option, substitute butter with plant-based margarine and use vegan marshmallows.
