Instructions

  1. Process Cookies: Add the sugar cookies to a food processor and pulse until they are ground into small crumbs.
  2. Combine with Cream Cheese: Add the cream cheese to the crumbs and pulse until fully combined into a dough-like consistency.
  3. Prepare for Shaping: Line a cookie sheet with parchment paper to prevent sticking during the freezing process.
  4. Shape Truffles: Using a 1-inch cookie scoop, scoop out the mixture and roll into 18 uniform balls. Place them on the prepared cookie sheet.
  5. Freeze Truffles: Place the cookie sheet in the freezer for 15 minutes to firm up the balls for easier coating.
  6. Melt Candy Coating: Melt the red candy melts over a pot of boiling water using a double boiler method until smooth.
  7. Dip Truffles: Remove the truffles from the freezer one at a time and dip them into the melted candy coating. Place dipped truffles back on the parchment-lined cookie sheet.
  8. Add Sprinkles: Immediately decorate dipped truffles with sprinkles before the coating hardens.
  9. Repeat Dipping: Continue dipping and decorating all remaining truffles following the same method.
  10. Chill Coated Truffles: Place the cookie sheet back into the refrigerator for about 15 minutes to let the coating harden completely.
