  • 1.5 tsp chile ancho powder
  • 1 tsp monk fruit sweetener
  • 12 tsp chipotle powder (adjust based on desired spice level)
  • Seasoned salt to taste
  • 1/21 tsp MSG (optional, adjust to taste)

Instructions

  1. Spread Chips: Arrange the kettle chips on a baking sheet in a single, even layer so they heat and crisp uniformly.
  2. Grate Cheese: Grate a generous amount of Parmigiano Reggiano over the chips ensuring they are well-covered for the cheese melt.
  3. Bake: Place the baking sheet in the oven preheated to 300°F (150°C) and bake the chips for 8-12 minutes until the cheese has melted and melded into the chips.
  4. Mix Spices: While the chips bake, combine smoked paprika, garlic salt or powder, onion powder, dried chives, chile ancho powder, monk fruit sweetener, chipotle powder, seasoned salt, and MSG in a bowl, mixing thoroughly to create the spice blend.
  5. Spice the Chips: Remove the chips from the oven while still warm. Sprinkle the spice blend over the chips and toss gently to evenly coat all the chips with the seasoning.
  6. Assemble and Serve: Finish by topping the seasoned chips with additional Parmigiano Reggiano and a sprinkle of dried chives for extra flavor and presentation. Serve immediately for the best texture.
