- 1–2 tsp chipotle powder (adjust based on desired spice level)
- Seasoned salt to taste
- 1/2–1 tsp MSG (optional, adjust to taste)
Instructions
- Spread Chips: Arrange the kettle chips on a baking sheet in a single, even layer so they heat and crisp uniformly.
- Grate Cheese: Grate a generous amount of Parmigiano Reggiano over the chips ensuring they are well-covered for the cheese melt.
- Bake: Place the baking sheet in the oven preheated to 300°F (150°C) and bake the chips for 8-12 minutes until the cheese has melted and melded into the chips.
- Mix Spices: While the chips bake, combine smoked paprika, garlic salt or powder, onion powder, dried chives, chile ancho powder, monk fruit sweetener, chipotle powder, seasoned salt, and MSG in a bowl, mixing thoroughly to create the spice blend.
- Spice the Chips: Remove the chips from the oven while still warm. Sprinkle the spice blend over the chips and toss gently to evenly coat all the chips with the seasoning.
- Assemble and Serve: Finish by topping the seasoned chips with additional Parmigiano Reggiano and a sprinkle of dried chives for extra flavor and presentation. Serve immediately for the best texture.
