Description

This Roasted Tomato Crostini with Burrata and Basil is a simple yet elegant appetizer featuring juicy, oven-roasted cherry tomatoes atop toasted French baguette slices, creamy burrata cheese, and fresh basil, finished with a drizzle of extra virgin olive oil. Perfect for entertaining or a light snack, it balances fresh and rich flavors beautifully.

Ingredients

Scale

Bread and Cheese

  • 12 slices of a French baguette
  • 1/2 cup burrata

Roasted Tomatoes

  • 2436 cherry tomatoes
  • 1 tbsp extra virgin olive oil (plus more for drizzle)
  • Salt (to taste)
  • Black pepper (to taste)

Garnish

  • Fresh basil leaves

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) and allow it to fully heat while preparing the ingredients.
  2. Prepare the cherry tomatoes: Place the cherry tomatoes on a parchment-lined baking sheet. Drizzle 1 tablespoon of extra virgin olive oil over them, sprinkle with salt and pepper to taste, then toss gently to ensure all tomatoes are evenly coated.
  3. Roast the tomatoes: Put the baking sheet in the preheated oven and roast the tomatoes for about 30 minutes, or until they burst and start releasing their juices, developing a deeper, concentrated flavor.
  4. Toast the bread slices: While tomatoes roast, prepare the baguette slices by toasting them. You can bake them in the oven, grill, or pan-fry them until golden and crisp on both sides.
  5. Remove and assemble: Once the tomatoes are done, take them out of the oven. Spread a generous amount of burrata on each toasted baguette slice, then top with 2 to 3 roasted tomatoes per slice.
  6. Finish and serve: Drizzle the crostini with additional extra virgin olive oil and garnish with fresh basil leaves. Serve immediately to enjoy the contrast of warm roasted tomatoes and creamy burrata.

Notes

  • If fresh basil is unavailable, substitute with fresh oregano or parsley for a different but complementary flavor.
  • For extra flavor, consider rubbing the toasted bread with a cut garlic clove before adding the burrata.
  • You can substitute burrata with fresh mozzarella if burrata is not accessible.
  • Use a good quality extra virgin olive oil for drizzling to enhance the taste.
  • This recipe can be made ahead by roasting tomatoes and toasting bread separately; assemble just before serving to keep bread crispy.
