Instructions
- Preheat the oven: Set your oven to 400°F (200°C) and allow it to fully heat while preparing the ingredients.
- Prepare the cherry tomatoes: Place the cherry tomatoes on a parchment-lined baking sheet. Drizzle 1 tablespoon of extra virgin olive oil over them, sprinkle with salt and pepper to taste, then toss gently to ensure all tomatoes are evenly coated.
- Roast the tomatoes: Put the baking sheet in the preheated oven and roast the tomatoes for about 30 minutes, or until they burst and start releasing their juices, developing a deeper, concentrated flavor.
- Toast the bread slices: While tomatoes roast, prepare the baguette slices by toasting them. You can bake them in the oven, grill, or pan-fry them until golden and crisp on both sides.
- Remove and assemble: Once the tomatoes are done, take them out of the oven. Spread a generous amount of burrata on each toasted baguette slice, then top with 2 to 3 roasted tomatoes per slice.
- Finish and serve: Drizzle the crostini with additional extra virgin olive oil and garnish with fresh basil leaves. Serve immediately to enjoy the contrast of warm roasted tomatoes and creamy burrata.
