Instructions

  1. Preheat the oven. Preheat your oven to 400°F (204°C) to prepare for baking the pie.
  2. Prepare the pie shell. Place the chopped rhubarb evenly into the unbaked pie shell to form the base layer.
  3. Make the custard mixture. In a separate bowl, whisk together the granulated sugar, beaten eggs, heavy cream, flour, and salt until the mixture is smooth and well combined.
  4. Pour custard over rhubarb. Pour the prepared custard mixture evenly over the rhubarb-filled pie shell, ensuring full coverage.
  5. Bake initially at high temperature. Place the pie in the oven and bake at 400°F for 10 minutes to start setting the custard.
  6. Reduce heat and continue baking. Lower the oven temperature to 350°F (177°C) and continue baking the pie for an additional 40 minutes, or until the custard is mostly set. The center may still jiggle slightly but will firm up upon cooling.
  7. Cool and store. Remove the pie from the oven and allow it to cool completely at room temperature. Once cooled, refrigerate the pie until ready to serve to maintain freshness.
