These Reese’s Granola Protein Bites are a delicious, high-protein snack combining creamy peanut butter, collagen protein powder, and crunchy peanut butter protein granola, coated with sugar-free milk chocolate for a guilt-free treat perfect for on-the-go energy.

Wet Ingredients

  • 1/2 cup creamy natural peanut butter
  • 1/4 cup sugar-free maple syrup (or 2 tbsp. maple syrup + 2 tbsp. water)
  • 1/2 tsp. pure vanilla extract (optional)

Dry Ingredients

  • 1/2 cup (60g) flavorless collagen protein powder (I used LIV Body brand)
  • 1 1/2 cup (80g) peanut butter protein granola

Topping

  • 3 oz. sugar-free milk chocolate (or dairy-free alternative), melted
  • Sprinkle of sea salt (optional)

Instructions

  1. Melt Peanut Butter and Syrup: In a saucepan over low heat, melt together the creamy natural peanut butter and sugar-free maple syrup, stirring constantly until smooth and combined.
  2. Add Collagen and Vanilla: Remove the mixture from heat and slowly whisk in the flavorless collagen protein powder and vanilla extract, if using, until the mixture is smooth and evenly blended.
  3. Combine with Granola: Pour the melted peanut butter mixture over the peanut butter protein granola and stir until thoroughly combined, ensuring all granola pieces are coated.
  4. Form Bites: Using rounded tablespoons, scoop out the mixture onto a parchment or wax paper-lined sheet. Place the sheet in the freezer and chill for about 30 minutes to allow the bites to harden.
  5. Melt Chocolate: Melt the sugar-free milk chocolate in a small metal bowl placed inside a saucepan with simmering water, or alternatively, melt in the microwave in 15-30 second intervals, stirring between each until smooth.
  6. Coat Bites with Chocolate: Once the granola bites have hardened, either spread the melted chocolate over each bite with a spoon or quickly roll each bite in the melted chocolate to coat thoroughly.
  7. Set Chocolate: Return the chocolate-coated bites to the lined sheet and chill in the refrigerator just until the chocolate hardens, about 15-20 minutes.
  8. Storage and Enjoy: Enjoy immediately or store leftovers in an airtight container in the refrigerator for at least one week.
