This Pineapple Chicken recipe is a flavorful, quick stovetop dish combining tender chicken pieces with sweet pineapple chunks and vibrant bell peppers, all brought together by a tangy and slightly sweet sauce featuring hoisin and soy. It’s perfect for a weeknight dinner that’s both satisfying and easy to prepare.

Ingredients

Scale

Chicken & Vegetables

  • 3 boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 2 green onions, sliced

Seasoning & Sauce

  • 2 tsp vegetable oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 tbsp minced garlic
  • 1/2 tsp ground ginger
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup chicken broth
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 2 tsp cornstarch
  • 1 tbsp sesame seeds

Instructions

  1. Heat the oil and cook chicken: Heat 2 tsp of vegetable oil in a large skillet over medium heat. Add the chicken pieces and season them with 1/2 tsp salt and 1 tsp pepper. Cook for 4-6 minutes, stirring occasionally, until the chicken is fully cooked through.
  2. Add vegetables and pineapple: Add the diced red bell pepper and pineapple chunks to the skillet. Continue cooking for 3-5 minutes until the bell pepper becomes tender but still crisp.
  3. Prepare the sauce: In a small bowl, combine 1/2 cup pineapple juice, 1/3 cup soy sauce, 1/3 cup chicken broth, 1/4 cup hoisin sauce, 1/4 cup brown sugar, 1 tbsp minced garlic, 1/2 tsp ground ginger, and 2 tsp cornstarch. Whisk until fully blended and smooth.
  4. Simmer with sauce: Pour the prepared sauce into the skillet with the chicken and vegetables. Bring it to a low simmer and cook for 1-2 minutes, stirring frequently, until the sauce thickens to your liking. Remove from heat once thickened.
  5. Garnish and serve: Sprinkle 1 tbsp sesame seeds and sliced green onions on top before serving. Enjoy your delicious pineapple chicken!

Notes

  • Use fresh pineapple for the best texture and flavor, but canned pineapple in its own juice works perfectly as well.
  • Adjust the brown sugar if you prefer a sweeter or less sweet sauce.
  • You can substitute chicken breasts with thighs for a juicier texture.
  • Serve over steamed white rice or noodles for a complete meal.
  • To make it spicier, add a pinch of red pepper flakes when cooking the chicken.
