- 3 boneless skinless chicken breasts, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 cup pineapple chunks (fresh or canned)
- 2 green onions, sliced
Seasoning & Sauce
- 2 tsp vegetable oil
- 1/2 tsp salt
- 1 tsp pepper
- 1 tbsp minced garlic
- 1/2 tsp ground ginger
- 1/2 cup pineapple juice
- 1/3 cup soy sauce
- 1/3 cup chicken broth
- 1/4 cup hoisin sauce
- 1/4 cup brown sugar
- 2 tsp cornstarch
- 1 tbsp sesame seeds
Instructions
- Heat the oil and cook chicken: Heat 2 tsp of vegetable oil in a large skillet over medium heat. Add the chicken pieces and season them with 1/2 tsp salt and 1 tsp pepper. Cook for 4-6 minutes, stirring occasionally, until the chicken is fully cooked through.
- Add vegetables and pineapple: Add the diced red bell pepper and pineapple chunks to the skillet. Continue cooking for 3-5 minutes until the bell pepper becomes tender but still crisp.
- Prepare the sauce: In a small bowl, combine 1/2 cup pineapple juice, 1/3 cup soy sauce, 1/3 cup chicken broth, 1/4 cup hoisin sauce, 1/4 cup brown sugar, 1 tbsp minced garlic, 1/2 tsp ground ginger, and 2 tsp cornstarch. Whisk until fully blended and smooth.
- Simmer with sauce: Pour the prepared sauce into the skillet with the chicken and vegetables. Bring it to a low simmer and cook for 1-2 minutes, stirring frequently, until the sauce thickens to your liking. Remove from heat once thickened.
- Garnish and serve: Sprinkle 1 tbsp sesame seeds and sliced green onions on top before serving. Enjoy your delicious pineapple chicken!
