  • Author: Isabella
  • Total Time: 45 minutes
  • Yield: Approximately 30 patties (depending on cutter size) 1x

Description

These homemade Peppermint Patties are a delightful holiday treat featuring a soft, fondant-like peppermint filling dipped in rich semi-sweet chocolate. Perfectly refreshing with just the right balance of sweetness and mint, these patties are easy to make and sure to impress family and friends during the festive season or anytime you crave a cool chocolate-mint candy.

Ingredients

Scale

Filling

  • 3 tbsp (42g) unsalted butter, room temperature
  • 3 tbsp (45ml) light corn syrup
  • 1 tsp peppermint extract
  • 1/4 tsp vanilla extract
  • 2 1/2 cups (288g) powdered sugar

Chocolate Coating

  • 12 oz semi-sweet chocolate
  • 1 1/2 tsp shortening
  • Sprinkles, optional

Instructions

  1. Make the Filling: In a mixing bowl, combine the softened butter, light corn syrup, peppermint extract, vanilla extract, and powdered sugar. Beat the mixture until it initially becomes crumbly but then starts to come together into a dough-like consistency.
  2. Form the Dough: Use your hands or a spatula to further bring the mixture together into a smooth, cohesive ball. The texture should be soft, pliable, and similar to fondant, not sticky.
  3. Roll Out the Dough: Place the dough between two sheets of parchment paper and roll it out evenly to about 1/4 inch thickness.
  4. Cut the Patties: Remove the top sheet of parchment paper and use a round biscuit cutter, about 1 3/4 inches in diameter, to cut out circular peppermint patties. The number of patties depends on your cutter size.
  5. Freeze the Patties: Arrange the cut patties on a parchment-lined baking sheet and freeze them for about 30 minutes until firm. This step helps maintain their shape during dipping.
  6. Melt the Chocolate: In a medium bowl, combine the semi-sweet chocolate and shortening. Heat in 15-20 second intervals in the microwave, stirring between each until the chocolate is fully melted and smooth.
  7. Dip the Patties: Using a fork, carefully dip each peppermint patty into the melted chocolate, allowing excess chocolate to drip off. Gently scrape the bottom of the fork against the bowl edge to remove extra chocolate. Place the coated patties onto parchment paper to set.
  8. Decorate and Set: Once all patties are dipped, drizzle any remaining chocolate over them and add sprinkles if desired. Let them sit at room temperature until the chocolate is firm or refrigerate briefly to speed up the setting process.

Notes

  • Use room temperature butter for easier mixing and better texture.
  • Freezing the patties before dipping helps prevent them from losing shape in the melted chocolate.
  • Shortening in the chocolate coating ensures a smooth, glossy finish.
  • You can substitute peppermint extract with pure peppermint oil but use less as it is more concentrated.
  • Store peppermint patties in an airtight container in a cool place for up to two weeks.
