Energy Ball Mixture

  • 1 cup pitted Medjool dates (about 15 dates)
  • 1 cup oats
  • 1/4 cup ground flax seeds
  • 1/4 cup shredded coconut
  • 1/2 cup peanut butter (creamy or natural)
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • pinch of salt

Fillings

  • Your favourite jam (about 15 tsp for dollops)

Instructions

  1. Prepare Jam in Freezer: Line a baking pan with parchment paper and place about 15 small dollops (about 1 teaspoon each) of jam spaced apart on the pan. Place the pan in the freezer for at least 2 hours to let the jam firm up for easier handling during assembly.
  2. Make the Energy Ball Mixture: In a food processor, blend the pitted Medjool dates, oats, ground flax seeds, shredded coconut, peanut butter, vanilla extract, cinnamon, and pinch of salt until the mixture is well combined and sticky when pressed between your fingers. Add a few more dates if the mixture is not sticky enough for shaping.
  3. Shape the Disks: Using your hands, scoop out portions of the dough and flatten each into a disk shape to prepare for filling.
  4. Add Jam Filling: Remove the jam from the freezer and place a dollop of the frozen jam in the center of each dough disk.
  5. Seal and Form Balls: Fold the edges of the disk up around the jam, sealing it inside like a dumpling, then gently roll it between your hands to form a smooth ball.
  6. Repeat: Continue the process until all of the dough and jam are used to make about 15 energy balls.
  7. Store: Place the finished energy balls in an airtight container and store them in the refrigerator to keep fresh.

  • Use frozen jam to prevent the filling from leaking while forming the energy balls.
  • Adjust the sweetness by adding more dates if the mixture feels too dry.
