  • 135 g Rolled oats (or quick oats)
  • 10 g Cinnamon
  • 5 g Ground ginger
  • 3 g Ground cloves

  • 40 g Desiccated coconut

Instructions

  1. Prepare biscuits: Place 250 g of gingernut biscuits into a blender, food processor, or hand blender and process until they become a fine powder. Alternatively, put the biscuits in a large ziplock bag and crush them finely using a rolling pin.
  2. Combine ingredients: Add 400 ml condensed milk, 10 g cinnamon, 5 g ground ginger, 3 g ground cloves, 3 g allspice, and 40 g desiccated coconut to the crushed biscuits in the processor. Blend until everything is combined. Gradually add 135 g rolled oats while mixing until the mixture reaches a consistency where you can easily form a ball by hand without it becoming too sticky or dropping.
  3. Form truffle balls: Using a spoon or an ice cream scoop, portion approximately 1 tablespoon of the mixture and roll it into a ball. If the mixture is too soft and the balls do not hold their shape, chill the mixture in the refrigerator for 10-15 minutes to firm up before continuing to shape the rest of the balls.
  4. Optional chocolate decoration: Place 45 g white chocolate in a microwave-safe dish and microwave in 10-second intervals, stirring in between until half melted. Stir without further heating to avoid clumping.
  5. Dip and decorate: Using a fork or chopstick, dip each truffle ball into the melted white chocolate and move it back and forth to coat it to your liking. Add Christmas sprinkles if desired for a festive finish.
