Description

This Mixed Berry Icebox Cake is a delightful no-bake dessert featuring layers of creamy cheesecake-flavored pudding, golden Oreos, and fresh mixed berries. Light, refreshing, and easy to assemble, it’s perfect for summertime gatherings or a quick sweet treat that requires minimal effort.

Ingredients

Scale

Pudding

  • 2 (3.4 oz) packages cheesecake flavored pudding mix
  • 4 1/2 cups (1080 ml) milk, divided

Cookies

  • 2 (15.25 oz) boxes Golden Oreos

Fruit

  • 1 lb package strawberries, washed and sliced
  • 1 pint blueberries, plus more for decorating

Whipped Cream

  • 12 oz Cool Whip, or 1 1/2 recipes of Homemade Whipped Cream

Instructions

  1. Prepare the pudding: Make both cheesecake flavored puddings according to the directions on the package, using 4 cups of the milk (2 cups of milk per package). Set aside to thicken.
  2. Dip Oreos in milk and layer: Pour the remaining 1/2 cup milk into a small bowl. Quickly dip each Golden Oreo in the milk and arrange a single layer at the bottom of a 9×13 inch pan.
  3. First pudding layer: Spread half of the prepared cheesecake pudding evenly over the Oreo layer.
  4. Add strawberry slices: Arrange a single layer of sliced strawberries over the pudding, reserving some for decoration later.
  5. Layer whipped cream: Spread half of the Cool Whip or homemade whipped cream over the strawberries.
  6. Second Oreo layer: Again, quickly dip the remaining Oreos in milk and place a single layer on top of the whipped cream.
  7. Second pudding layer: Spread the remaining cheesecake pudding evenly over the Oreos.
  8. Add blueberries: Layer the blueberries over the pudding, reserving some for decoration on top.
  9. Top with whipped cream: Spread the remaining whipped cream over the blueberries.
  10. Decorate: Garnish the top generously with the reserved strawberry slices and blueberries to make the dessert visually appealing.
  11. Chill: Refrigerate the assembled cake for 2 to 3 hours to allow the Oreos to soften, making the cake easy to slice and enhancing the flavors before serving.

Notes

  • For best results, use fresh and ripe strawberries and blueberries to enhance flavor and texture.
  • Cool Whip can be substituted with fresh homemade whipped cream for a lighter, less processed option.
  • The cake can be assembled a day ahead to deepen flavor and ease preparation before serving.
  • Use Golden Oreos for a nice contrast in flavor and color to traditional chocolate Oreos.
  • If you prefer a firmer cake, refrigerate longer, but 2-3 hours is sufficient for optimal texture.
