Waffle Batter

Instructions
- Prepare the batter: In a large mixing bowl, combine the cooked instant mashed potatoes, all-purpose flour, eggs, 2 tablespoons of the freshly sliced chives, garlic powder, and paprika. Season the mixture with kosher salt and freshly ground black pepper to taste and stir well until fully incorporated.
- Cook the waffles: Preheat your waffle iron and spray it liberally with cooking spray to prevent sticking. Spoon about 1/4 cup of the potato batter onto the waffle iron and cook until the waffles are golden brown and crispy on the outside, approximately 3 to 4 minutes. Carefully transfer the cooked waffles to a medium-sized baking sheet laid out in a single layer to cool slightly while you cook the remaining batter.
- Broil with toppings: Once all waffles are cooked, preheat your oven broiler to high. Evenly top the waffles on the baking sheet with the shredded cheddar cheese and place under the broiler.
