Scale
Main Ingredients
- 7 cups Lucky Charms cereal (10 ounces, 275g)
- 5 tablespoons unsalted butter (70g)
- 7 cups mini marshmallows (12 ounces, 340g)
Instructions
- Prepare the Pan: Line a 9×9-inch baking pan with parchment paper or foil. To secure the lining, spray the pan lightly with nonstick cooking spray if needed.
- Reserve Marshmallows: Measure out the Lucky Charms cereal. Remove about ⅓ cup of the colorful marshmallow pieces from the cereal and set them aside for topping.
- Melt Butter and Marshmallows: In a large pot over medium heat, melt the butter. Add all the mini marshmallows and stir frequently with a silicone spatula until the marshmallows are completely melted and smooth, approximately 5 to 7 minutes. Remove the pot from heat immediately after melting.
- Mix Cereal and Melted Marshmallows: Quickly add the Lucky Charms cereal to the melted marshmallow mixture. Use a folding motion with the spatula to combine them evenly. Work swiftly to prevent the marshmallows in the cereal from melting extensively.
- Press into Pan and Add Topping: Pour the combined mixture into the prepared baking pan. Using a silicone spatula or the wrapper from the butter stick, press the mixture evenly into the pan. Sprinkle the reserved colorful marshmallows on top, gently pressing them into the surface for decoration.
- Cool and Cut: Allow the treats to cool completely at room temperature for about 1 hour until they are set. Once cooled, use the parchment paper to lift the treats from the pan. Lightly grease a sharp knife before cutting into squares to make clean slices.
Notes
- To ensure even pressing and avoid sticking, grease your spatula or butter wrapper before pressing the mixture into the pan.
- Work quickly when folding in the cereal to keep the marshmallow pieces intact.
- Store the treats in an airtight container at room temperature for up to 3 days to maintain freshness.
- You can customize the recipe by adding sprinkles or mini chocolate chips for extra flavor.
