Description

A creamy and cheesy keto-friendly chicken broccoli casserole that’s quick to prepare and perfect for a low-carb dinner. The tender broccoli and cooked chicken are enveloped in a rich garlic-infused cream sauce, topped with melted mozzarella and Parmesan cheese, then broiled to golden perfection.

Ingredients

Scale

Main Ingredients

  • 2 tbsp (28.4 g) butter, divided
  • 16 ounces (453.59 g) broccoli, coarsely chopped
  • 4 cloves garlic, minced
  • 3/4 cup (177.44 ml) heavy whipping cream
  • 1 1/3 cups (149.33 g) shredded mozzarella, divided
  • 1/3 cup (33.33 g) grated parmesan cheese
  • Salt and pepper to taste
  • 1 1/2 lb (680.39 g) cooked, chopped chicken (about 4 cups)

Instructions

  1. Sauté Broccoli: Set a 10-inch ovenproof skillet over medium heat and add 1 tablespoon of the butter. Once melted, add the broccoli and sauté until bright green and just tender, about 4 minutes. Remove the broccoli to a bowl.
  2. Cook Garlic and Cream: Melt the remaining butter in the pan and add the minced garlic, cooking until fragrant, about 1 minute. Add the heavy whipping cream and bring it to a simmer, then cook until the sauce is reduced and thickened, about 3 to 5 minutes.
  3. Add Cheese and Season: Stir in 1/3 cup of shredded mozzarella and all the Parmesan cheese into the cream mixture until melted and smooth. Season the sauce with salt and pepper to taste.
  4. Combine and Top: Stir the sautéed broccoli and cooked chicken into the cheese sauce. Spread the mixture evenly in the skillet and top with the remaining 1 cup of shredded mozzarella.
  5. Broil: Preheat your oven’s broiler. Place the skillet about 6 inches from the heat source and broil until the cheese is bubbly and beginning to brown, about 2 to 5 minutes depending on your broiler’s intensity. Watch carefully to prevent burning.

Notes

  • Use cooked chicken from leftovers or rotisserie chicken for convenience.
  • Ensure broccoli is not overcooked during sautéing to maintain a slight crunch.
  • Adjust seasoning to your taste; consider adding a pinch of red pepper flakes for heat.
  • For a dairy-free version, substitute cream and cheeses with coconut cream and vegan cheeses respectively, though this will alter the flavor profile.
  • Serving sizes can be adjusted depending on appetite and whether served with a side dish.
