  2. Spread the chocolate: Pour the melted chocolate onto the back of a baking sheet and use an offset spatula to smooth it into as thin a layer as possible.
  3. Chill the chocolate: Place the baking sheet with the melted chocolate in the fridge for about 5 minutes, or in the freezer for 2-3 minutes, then let it rest at room temperature for a minute or two to reach the right consistency.
  4. Create the curls: Hold a metal spatula or scraper at a 45-degree angle and press it firmly against the chocolate surface, then push it forward to scrape the chocolate. If the chocolate is at the correct consistency, it will curl over itself as you scrape.
  5. Adjust consistency if needed: If the chocolate breaks into small pieces instead of curling, let it warm up slightly. If it is too soft and does not curl, return it to the fridge for 30 seconds to a minute to set more.
