Ingredients
Scale
For the Chicken
- 2 teaspoons extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 1/2 lbs. boneless skinless chicken breasts, cut into 1/2 inch cubes
- 3/4 teaspoon Italian seasoning
- 3/4 teaspoon paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
For the Sauce
- 2 tablespoons Dijon mustard
- 1/2 tablespoon coarse grain mustard
- 2 tablespoons honey
- 1–2 tablespoons low-sodium chicken broth
Instructions
- Sauté the Onion and Garlic: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 5 minutes until tender and translucent. Add the minced garlic and sauté for an additional minute to release its aroma.
- Season the Chicken: While the onion and garlic cook, season the cubed chicken breasts evenly with Italian seasoning, paprika, kosher salt, and black pepper.
- Cook the Chicken: Add the seasoned chicken pieces to the skillet and cook for about 3-4 minutes on one side. Flip the chicken pieces and cook for another 2-3 minutes until they start to brown and are nearly cooked through.
- Prepare the Honey Mustard Sauce: In a small bowl, whisk together the Dijon mustard, coarse grain mustard, honey, and 1 tablespoon of low-sodium chicken broth until smooth and well combined.
- Combine Chicken and Sauce: Pour the honey mustard mixture into the skillet with the chicken. Toss well to coat all the pieces evenly with the sauce.
- Finish Cooking: Continue cooking for 2-3 more minutes, allowing the chicken to cook through completely and the sauce to thicken slightly. Add the remaining tablespoon of chicken broth if you prefer a thinner sauce. Serve hot and enjoy your flavorful Honey Mustard Chicken!
