Description

This Honey Mustard Chicken recipe features tender, juicy chicken breasts cooked in a flavorful honey mustard sauce with a hint of Italian seasoning and paprika. Sautéed onions and garlic add depth to the dish, which comes together quickly in a skillet, making it perfect for a weeknight dinner.

Ingredients

Scale

For the Chicken

  • 2 teaspoons extra-virgin olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 lbs. boneless skinless chicken breasts, cut into 1/2 inch cubes
  • 3/4 teaspoon Italian seasoning
  • 3/4 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Sauce

  • 2 tablespoons Dijon mustard
  • 1/2 tablespoon coarse grain mustard
  • 2 tablespoons honey
  • 12 tablespoons low-sodium chicken broth

Instructions

  1. Sauté the Onion and Garlic: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 5 minutes until tender and translucent. Add the minced garlic and sauté for an additional minute to release its aroma.
  2. Season the Chicken: While the onion and garlic cook, season the cubed chicken breasts evenly with Italian seasoning, paprika, kosher salt, and black pepper.
  3. Cook the Chicken: Add the seasoned chicken pieces to the skillet and cook for about 3-4 minutes on one side. Flip the chicken pieces and cook for another 2-3 minutes until they start to brown and are nearly cooked through.
  4. Prepare the Honey Mustard Sauce: In a small bowl, whisk together the Dijon mustard, coarse grain mustard, honey, and 1 tablespoon of low-sodium chicken broth until smooth and well combined.
  5. Combine Chicken and Sauce: Pour the honey mustard mixture into the skillet with the chicken. Toss well to coat all the pieces evenly with the sauce.
  6. Finish Cooking: Continue cooking for 2-3 more minutes, allowing the chicken to cook through completely and the sauce to thicken slightly. Add the remaining tablespoon of chicken broth if you prefer a thinner sauce. Serve hot and enjoy your flavorful Honey Mustard Chicken!

Notes

  • Ensure the chicken is cut into uniform pieces for even cooking.
  • You can substitute chicken thighs for chicken breasts if you prefer darker meat.
  • Adjust honey quantity to taste for a sweeter or milder sauce.
  • Serve with rice, quinoa, or steamed vegetables for a complete meal.
  • This dish can be reheated easily and tastes great the next day.
