- 1 cup plain fat free Greek yogurt or dairy-free Greek yogurt (we used Fage brand)
Baking Soda Bath
- ¼ cup baking soda (4 tablespoons)
- 4½ cups water
Cinnamon Sugar Topping (Optional)
- ¾ cup granulated sugar
- 1½ teaspoons ground cinnamon
- 4 tablespoons melted butter or dairy-free butter
Instructions
- Preheat Oven: Preheat your oven to 400 degrees F and line a baking sheet with parchment paper. Set aside to prepare the dough.
- Make the Dough: In a large bowl, whisk together the gluten-free flour, baking powder, and salt. Add the Greek yogurt and mix with a stand or hand mixer for 2-3 minutes until the dough forms a ball and pulls away from the sides.
- Roll and Cut Pretzel Bites: Place dough on a silicone pastry mat. Lightly coat your hands with flour and knead the dough about 10 times. Divide into 4 equal pieces. Roll each piece into an 8-10 inch worm-like strip, then cut into 1-inch pieces using a pizza cutter or sharp knife. Arrange bites on the prepared baking sheet.
- Baking Soda Bath: Bring water and baking soda to a boil in a medium saucepan. Working in batches of 4-6 bites, boil bites for 10 seconds until they float. Remove with a slotted spoon, drain excess water, and return bites to the baking sheet.
- Add Salt (if using): While bites are still wet from the bath, sprinkle coarse salt on top if making the salted version. Skip this step if using cinnamon sugar topping.
