  • Author: Isabella
  • Total Time: 1 hour 25 minutes
  • Yield: 8-10 sushi rolls 1x
  • Diet: Vegetarian

Description

Fruity Pebbles Sushi is a fun and colorful dessert that transforms the classic crispy rice treat into playful sushi rolls. Made with melted marshmallows, butter, Fruity Pebbles cereal, and a layer of marshmallow fluff, this no-bake sweet treat is easy to make and perfect for parties or a unique snack.

Ingredients

Scale

Base Mixture

  • 1/4 cup butter
  • 10 oz mini marshmallows
  • 5 cups Fruity Pebbles cereal

Filling & Garnish

  • 2 cups marshmallow fluff

Instructions

  1. Prepare pan: Line a baking sheet with wax paper and grease it with cooking spray to prevent sticking.
  2. Melt marshmallows and butter: In a pot over low heat, melt the butter. Add the mini marshmallows and stir continually until they are fully melted and combined into a smooth mixture. Remove the pot from heat immediately once melted.
  3. Mix cereal: Quickly add the Fruity Pebbles cereal to the melted marshmallow and butter mix, stirring continuously until all the cereal is completely coated with the marshmallow mixture.
  4. Form base layer: Press the cereal mixture onto the prepared baking sheet, patting it into a thin, even rectangle shape using a spatula or your hands.
  5. Spread fluff: Evenly spread a thin single layer of marshmallow fluff over the cereal base.
  6. Roll sushi: Slice the cereal sheet in half crosswise, then carefully roll each half from the long side into sushi-like rolls.
  7. Chill: Place the rolled sushi sheets in the refrigerator for about 1 hour or until they are firm and can be sliced cleanly.
  8. Slice and serve: After chilling, slice the rolls into sushi-sized pieces and serve as fun fruity dessert bites.

Notes

  • Work quickly when mixing the cereal with the melted marshmallows to prevent hardening.
  • Use wax paper or parchment paper to make removing the cereal sheet easier.
  • These are best eaten the same day but can be stored in an airtight container for up to 2 days.
  • You can use other colorful crispy rice cereals if Fruity Pebbles are unavailable.
  • Greasing your hands with a little butter or spray can help when patting down the sticky cereal mixture.
