Description

These Easy Stuffed Mushrooms are a savory appetizer featuring tender mushrooms filled with a flavorful mixture of sautéed onions, garlic, fresh herbs, melted cheese, and toasted breadcrumbs. Baked to perfection, this dish is perfect for entertaining or a delicious snack.

Ingredients

Scale

Mushrooms

  • 20 white button or cremini mushrooms (10 ounces)
  • 1 tablespoon olive oil
  • Salt and fresh ground black pepper, to taste

Filling

  • 1 tablespoon butter
  • 1/2 cup chopped onion (half a medium onion)
  • 2 tablespoons minced garlic (4 to 5 cloves)
  • 2 teaspoons chopped fresh rosemary or thyme
  • 2 ounces (56g) shredded cheese (such as sharp cheddar, mozzarella, Swiss, or a combination)
  • 3 tablespoons breadcrumbs (panko or homemade)

Garnish (optional)

  • 1 tablespoon chopped fresh parsley or chives

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the stuffed mushrooms.
  2. Prepare the mushrooms: Using a damp paper towel, gently clean the mushrooms to remove any dirt. Remove the stems, discard the tougher parts, and finely mince the remaining tender stems.
  3. Arrange mushroom caps: Place the mushroom caps cavity-side up on a rimmed baking sheet or oven-safe skillet. Toss them with olive oil and lightly season with freshly ground black pepper to ensure even flavor throughout.
  4. Sauté vegetables: In a skillet over medium heat, melt the butter. Add the chopped onions, minced mushroom stems, and a pinch of salt. Cook while stirring occasionally until the onions become soft and aromatic, about 5 minutes.
  5. Add garlic and herbs: Stir in the minced garlic and fresh herbs (rosemary or thyme), cooking for an additional minute until fragrant but not browned. Transfer the mixture to a bowl and let it cool slightly.
  6. Toast breadcrumbs: Using the same skillet, place it over medium-low heat and add the breadcrumbs. Stir constantly for about one minute until they are lightly toasted and golden.
  7. Combine filling and stuff mushrooms: Mix the toasted breadcrumbs into the cooled onion and garlic mixture along with the shredded cheese. Spoon this filling evenly into each mushroom cap.
  8. Bake: Place the stuffed mushrooms in the preheated oven and bake for 15 to 20 minutes until the cheese has melted and the mushrooms are tender.
  9. Garnish and serve: Remove from the oven, sprinkle with chopped fresh parsley or chives if desired, and season with freshly ground black pepper before serving.
