Ingredients
Scale
Salmon and Glaze
- 1 lb salmon filet
- 2 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 tbsp whole grain dijon mustard
- 1 1/2 tbsp minced garlic
- Salt, to taste
Vegetables
- 1 head baby broccoli (or regular broccoli), chopped
Side
- 1 bag Success Boil-in-Bag Jasmine Rice, or 1 heaping cup cooked jasmine rice
Instructions
- Preheat the Oven: Set your oven to 375 degrees Fahrenheit to ensure it’s ready for baking your salmon and broccoli together.
- Prepare the Maple Mustard Glaze: In a small bowl, mix the olive oil, pure maple syrup, whole grain Dijon mustard, and minced garlic until evenly combined to create a flavorful glaze.
- Season and Glaze the Salmon: Place the salmon fillets skin side down on a greased or parchment paper-lined baking sheet. Sprinkle them lightly with salt. Spread the maple mustard mixture generously on top and around the sides of the salmon.
- Coat the Broccoli: Toss the chopped broccoli in a large mixing bowl with the remaining maple mustard glaze and a pinch of salt until coated thoroughly.
- Arrange on Baking Sheet: Arrange the coated broccoli on the other half of the prepared baking sheet, separate from the salmon.
- Bake: Place the baking sheet in the preheated oven and bake for 10 to 15 minutes, depending on the thickness of your salmon and how well done you prefer it. Around 13 minutes yields a perfectly cooked, moist salmon.
- Cook the Rice: While the salmon bakes, prepare the jasmine rice according to the package instructions for Success Boil-in-Bag Jasmine Rice or your preferred method.
- Serve: Once cooked, plate the salmon alongside the roasted broccoli and jasmine rice. Serve immediately and enjoy the harmonious blend of sweet and savory flavors.
Notes
- You can use either baby broccoli or regular broccoli florets based on availability and preference.
- Adjust baking time based on salmon thickness to avoid overcooking.
- For extra crispiness, broil the broccoli for the last 2 minutes, watching closely.
- Substitute brown rice if desired, but adjust cooking time accordingly.
