  • 1/4 tsp salt
  • 1/4 tsp black pepper

Chicken

  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 4 slices mozzarella cheese
  • 45 tablespoons balsamic glaze

Instructions

  1. Prepare the Bruschetta Topping: In a medium-sized bowl, combine diced Roma tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir everything together until well mixed, then set aside to let the flavors meld.
  2. Prepare the Chicken: If desired, pound the chicken breasts to an even thickness for more uniform cooking, or leave them whole. Coat each chicken breast evenly with 1 tablespoon of olive oil.
  3. Season the Chicken: In a small bowl, mix the Italian seasoning, garlic powder, salt, and black pepper. Rub the seasoning blend thoroughly over each chicken breast to ensure full flavor coverage.
  4. Grill the Chicken: Preheat your grill to high heat. Grill the chicken breasts for 6-8 minutes on each side or until they reach an internal temperature of 165°F (74°C) and are fully cooked through.
  5. Add the Cheese: Once the chicken is cooked, place a slice of mozzarella cheese on top of each breast. Close the grill lid or tent with foil for a minute or two to allow the cheese to melt perfectly.
