Ingredients
Scale
Chicken and Base
- 3 cups cooked and shredded chicken breast (rotisserie chicken preferred)
Chips
- 15 ounce bag Nacho Cheese Dorito chips
Dairy and Soup
- 1 cup sour cream
- 20 ounces (2 cans) condensed cream of chicken soup
- 1 cup freshly grated cheddar cheese
- 1 cup freshly grated Monterey Jack cheese
Vegetables and Seasonings
- 10 ounces Rotel (diced tomatoes with green chiles)
- 15 ounce can corn, drained (or 1.5 cups frozen/fresh corn)
- 1 teaspoon cumin
- 1 teaspoon chili powder
Optional Garnish
- Fresh diced tomatoes
- Thinly sliced green onions
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13-inch baking dish thoroughly with nonstick cooking spray to prevent sticking and ensure easy cleanup.
- Layer Chips: Crush the Dorito chips lightly and place half of them evenly on the bottom of the prepared baking dish. Set the remaining chips aside for topping later.
- Mix Filling Ingredients: In a large mixing bowl, combine the sour cream, condensed cream of chicken soup, Rotel tomatoes, drained corn, cumin, chili powder, and half portions of the cheddar and Monterey Jack cheeses. Stir these together until well blended, then fold in the shredded chicken until the mixture is uniform and fully combined.
- Assemble Casserole: Spread the prepared chicken mixture evenly over the layer of crushed Doritos in the baking dish. Then sprinkle the remaining crushed chips on top, followed by the rest of the shredded cheeses to create a cheesy crust.
- Bake: Place the casserole uncovered in the preheated oven and bake for 25 to 30 minutes, or until the cheese is fully melted, bubbly, and lightly golden on top.
- Rest and Serve: Remove the casserole from the oven and let it rest for 5 to 10 minutes to set and cool slightly. Top with optional fresh diced tomatoes and thinly sliced green onions before serving for added freshness and color.
Notes
- Use rotisserie chicken for a quick shortcut or cook your own chicken breasts and shred them.
- Crushing the Doritos lightly helps them meld into the casserole while maintaining some crunch.
- You can substitute canned corn with frozen or fresh corn; just be sure to drain canned corn well to avoid excess moisture.
- If you prefer a spicier casserole, add extra chili powder or some chopped jalapeños.
- Allowing the casserole to rest before serving helps it set and makes it easier to cut into neat portions.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
