Dry Ingredients
- 2 1/4 cups all purpose flour (use gluten free 1–1 flour if gluten free)
- 1 tsp baking soda
- 1 1/2 tsp arrowroot
- 1/2 tsp sea salt
Wet Ingredients
- 3/4 cup vegan butter (softened to room temperature)
- 3/4 cup brown sugar
- 1/2 cup raw cane sugar
- 1 large egg (at room temperature)
- 1 egg yolk (at room temperature)
- 2 tsp vanilla extract
Add-ins
- 1 cup Enjoy Life dairy free Chocolate Chips
Instructions
- Prepare Dry Ingredients: Whisk together the all-purpose flour, baking soda, arrowroot, and sea salt in a large bowl. Set aside to combine evenly.
- Mix Wet Ingredients: In a medium bowl, whisk the vegan butter, brown sugar, and raw cane sugar until smooth with no lumps. Then add the large egg, egg yolk, and vanilla extract, mixing thoroughly.
- Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients bowl and stir until fully incorporated. Fold in the dairy-free chocolate chips gently to distribute evenly.
- Chill Dough: Cover the dough and chill it in the refrigerator for 2 hours. This step helps develop flavors and prevents cookie spreading.
- Preheat Oven and Soften Dough: Remove dough from fridge and let it soften at room temperature for about 10 minutes while preheating the oven to 325°F (163°C).
- Prepare Cookie Sheet: Line a cookie sheet with parchment paper or a Silpat mat to prevent sticking.
- Scoop and Shape Cookies: Using a 2-3 tablespoon scoop, portion out dough balls. Roll each scoop into a ball and place on the prepared cookie sheet, spacing them evenly.
- Bake Cookies: Bake in the preheated oven for about 12 minutes. The edges should be slightly golden with a soft center.
- Cool Cookies: Remove cookies from the oven, let them rest on the cookie sheet for 5 minutes to complete baking, then transfer them to a wire rack to cool completely.
Notes
- For a gluten-free version, use a 1:1 gluten-free flour blend instead of all-purpose flour.
- Make sure vegan butter is softened to room temperature to blend well with sugars.
- Do not skip chilling the dough; this step improves texture and flavor.
- If you don’t have arrowroot, you can substitute with cornstarch but arrowroot provides a better chewy texture.
- Enjoy Life chocolate chips are dairy-free and allergy-friendly; you can substitute with any dairy-free chocolate chips.
- Let cookies cool completely before storing for best texture and freshness.
