Instructions

  2. Prepare the Gelatine Mixture: In a small bowl, mix the gelatin powder with the hot water until fully dissolved. Set aside to cool slightly while you prepare other components.
  3. Whisk the Egg Whites: Using an electric mixer, beat the egg whites until soft peaks form—firm enough to hold their shape but still glossy and smooth.
  4. Combine Gelatine and Chocolate: Stir the prepared gelatin mixture and orange liqueur into the melted white chocolate while it remains warm over the pot. Whisk well until the mixture is smooth and thoroughly incorporated.
  5. Add Crème Anglaise and Orange Zest: Remove the bowl from the heat and whisk in the crème anglaise and grated orange rind until you achieve a fluid, smooth mousse base without any lumps.
  6. Fold in Egg Whites and Chill: Gently fold the beaten egg whites into the chocolate mixture with a large metal spoon, preserving the airy texture. Pour the mousse into six serving glasses or ramekins, then refrigerate for at least 2 hours to set.
