Instructions
- Melt the Chocolate: Pour about 5 cm of water into a medium pot and bring it to a simmer over medium heat. Turn off the heat and place a heatproof bowl snugly on top, avoiding contact with the water. Break the white chocolate into pieces in the bowl and allow it to melt slowly, stirring occasionally until silky smooth.
- Prepare the Gelatine Mixture: In a small bowl, mix the gelatin powder with the hot water until fully dissolved. Set aside to cool slightly while you prepare other components.
- Whisk the Egg Whites: Using an electric mixer, beat the egg whites until soft peaks form—firm enough to hold their shape but still glossy and smooth.
- Combine Gelatine and Chocolate: Stir the prepared gelatin mixture and orange liqueur into the melted white chocolate while it remains warm over the pot. Whisk well until the mixture is smooth and thoroughly incorporated.
- Add Crème Anglaise and Orange Zest: Remove the bowl from the heat and whisk in the crème anglaise and grated orange rind until you achieve a fluid, smooth mousse base without any lumps.
- Fold in Egg Whites and Chill: Gently fold the beaten egg whites into the chocolate mixture with a large metal spoon, preserving the airy texture. Pour the mousse into six serving glasses or ramekins, then refrigerate for at least 2 hours to set.
