Instructions

  1. Prepare the Base: In the bowl of a large food processor fitted with a blade, combine the drained feta, Greek yogurt, and lemon zest. Blend until smooth and creamy.
  2. Whip in Olive Oil: While the food processor is running, slowly drizzle in the extra virgin olive oil through the top opening. Continue blending until the mixture is light, fluffy, and whipped to a smooth consistency.
  3. Transfer and Shape: Transfer the whipped feta mixture to a serving plate. Use the back of a spoon to smooth the top and create a small indentation or “well” in the center.
  4. Garnish the Dip: Drizzle additional olive oil over the top of the whipped feta. Sprinkle Aleppo pepper evenly, then scatter the chopped fresh mint and parsley over the surface. If using, add toasted pine nuts and crushed pistachios on top for texture and crunch.
