Ingredients
Scale
Steak and Seasoning
- 1 ½ pounds ribeye or NY strip steak, cut into 1-inch cubes
- Vegetable or olive oil, for the steak
- 1 ½ teaspoons smoked paprika
- ¾ teaspoon garlic powder
- ¼ teaspoon onion powder
- 2 teaspoons Italian seasoning
- 1 teaspoon Kosher salt
- ½ teaspoon ground black pepper
Sauce and Garnish
- 4 tablespoons unsalted butter (plus more as needed)
- ½ small shallot, finely minced
- 6 cloves garlic, minced
- 1 cup heavy cream
- ⅓ cup freshly grated parmesan cheese
- ½ tablespoon chopped Italian parsley (plus more for garnish)
Side
- Red Skin Mashed Potatoes (or your favorite mashed potatoes) for serving
Instructions
- Prepare the Mashed Potatoes: Start by making the red skin mashed potatoes according to your preferred recipe or the linked instructions. Keep them warm and ready to serve alongside the steak bites.
- Season the Steak: Toss the cubed steak with a few drizzles of oil along with smoked paprika, garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Let the steak marinate and absorb the flavors for about 15 minutes.
- Sear the Steak Bites: Heat a large cast iron skillet over high heat until very hot. Add a few drizzles of oil, then add the seasoned steak cubes. Sear the steak for about 2 minutes or more per side depending on your desired doneness. Once nicely seared, remove the steak bites from the pan and set aside.
- Sauté Shallots and Garlic: Reduce the heat to medium-low and let the pan cool slightly. Add unsalted butter, then the minced garlic and shallots. Sauté briefly—just a few seconds until fragrant—to develop the butter’s flavor without burning the garlic.
- Combine Steak and Butter: Return the steak bites to the pan and toss to coat with the garlic butter. Then transfer the steak to a bowl along with half of the garlic butter from the pan. Reserve the remaining garlic butter in the skillet to make the sauce.
- Make the Creamy Parmesan Sauce: To the same skillet with leftover garlic butter, stir in the heavy cream and bring to a low simmer for a few seconds. Turn off the heat, add the grated parmesan cheese, and stir the mixture until it thickens. Season the sauce with salt and pepper to taste and add the chopped Italian parsley.
- Serve: Plate the red skin mashed potatoes, spoon the garlic butter steak bites over the top, then drizzle generously with the creamy parmesan sauce. Garnish with additional fresh parsley if desired. Enjoy your rich and flavorful steak bites!
Notes
- Use a cast iron skillet for the best sear on the steak bites.
- Letting the steak sit after seasoning improves the flavor absorption.
- Adjust cooking time according to your preferred steak doneness.
- The creamy sauce thickens quickly once cheese is added, so stir immediately.
- Leftover garlic butter can be saved and used as a flavorful addition to vegetables or bread.
- For a lower-fat option, substitute heavy cream with half-and-half, but the sauce will be less rich.
