Perfect for a comforting family meal, it’s easy to prepare and pairs wonderfully with rice, mashed potatoes, or egg noodles.
Ingredients
Scale
Chicken
- 1.5 lbs boneless, skinless chicken breasts (or thighs)
Gravy Mix
- 2 (.87 oz) packets low-sodium chicken gravy
- 1/4 cup dry whole milk powder
- 2 tablespoons cornstarch
- 1 1/2 tablespoons instant chicken bouillon granules
- 3/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly cracked black pepper
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 2 cups water
Instructions
- Prepare Crockpot: Lightly coat the inside of a 6+ quart crockpot insert with non-stick spray. Place the chicken breasts evenly inside the crockpot.
- Mix Dry Ingredients: In a medium bowl, whisk together the chicken gravy packets, dry whole milk powder, cornstarch, instant chicken bouillon granules, garlic powder, onion powder, black pepper, dried basil, and dried thyme to combine all the dry ingredients thoroughly.
- Create Gravy Paste: Slowly pour in the water while continuously stirring to form a smooth paste. Continue stirring carefully as you whisk in the remaining water gradually to prevent lumps and ensure a creamy gravy consistency.
- Cook Chicken: Pour the gravy mixture evenly over the chicken in the crockpot. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until the chicken is fully cooked and tender enough to shred easily.
- Shred and Serve: Using two forks, shred the cooked chicken into your preferred size pieces. Serve the juicy chicken and creamy gravy over rice, mashed potatoes, or egg noodles. For a kid-friendly twist, enjoy with Ritz crackers as a side.
Notes
- Use boneless, skinless chicken thighs as a substitute for breasts if you prefer a richer flavor and juicier texture.
- Adjust the black pepper and other seasonings to your taste preference before cooking.
- If the gravy is too thick after cooking, you can thin it with a little hot water or chicken broth.
- Make sure to spray the crockpot insert well to prevent sticking and make cleaning easier.
- This dish freezes well; store leftover chicken and gravy in an airtight container for up to 3 months.
