- 1/2 cup mini chocolate chips (e.g., Enjoy Life brand)
Wet Ingredients
- 1 cup all natural creamy peanut butter
- 1/2 cup raw honey
Instructions
- Prepare Dry Ingredients: Combine all dry ingredients — oats, protein powder, cocoa powder, ground coffee, and mini chocolate chips — in a KitchenAid mixer bowl.
- Mix Dry Ingredients: Mix on low speed until all dry ingredients are evenly blended together.
- Add Wet Ingredients: Add the peanut butter and raw honey to the blended dry ingredients in the mixer bowl.
- Mix to Form Dough: Mix on medium speed until the mixture forms a cohesive dough. If necessary, scrape the sides of the bowl with a spatula and mix again to ensure uniformity.
- Scoop Dough into Balls: Remove the bowl from the KitchenAid stand. Using a 2-inch cookie scoop, form the dough into balls.
- Chill: Place the formed balls on a parchment-lined cookie sheet or into a storage container. Refrigerate for at least one hour to allow the balls to set.
