Chipotle Sauce
- 1 tablespoon chipotle adobo sauce
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon coarse salt
Sandwich
- 1 tablespoon olive oil
- 2 slices sourdough bread
- 1 slice Chao creamy original cheese
- 1/4 avocado, sliced
- 2 ounces smoked chicken breast, sliced
- 3 Peppadew peppers, sliced
- 1 tablespoon fresh chopped cilantro
- 1 – 2 tablespoons chipotle sauce (prepared above)
Instructions
- Prepare the chipotle sauce: In a small bowl, combine chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt. Stir until smooth and adjust seasoning to taste. Set aside.
- Heat the skillet and prepare bread: Heat a large skillet over medium-high heat. Brush olive oil onto the outer sides of each slice of sourdough bread.
- Assemble the sandwich in the skillet: Place one slice of bread, oiled side down, on the skillet. Layer with the Chao creamy original cheese, followed by sliced smoked chicken breast, Peppadew peppers, sliced avocado, and chopped cilantro. Spread the prepared chipotle sauce on the inside of the second bread slice before placing it on top, chipotle sauce side down.
- Cook the sandwich: Cook until the bottom slice is golden brown and the cheese begins to melt, approximately 3-4 minutes. Carefully flip the sandwich and continue to cook another 3-4 minutes until the other side is toasted and the cheese is fully melted.
- Serve: Remove the sandwich from the skillet and slice it in half. Serve immediately for a warm, melty, and flavorful meal.
