  • Author: Isabella
  • Total Time: 1 hour
  • Yield: 6 servings 1x

Description

This comforting Chicken and Stuffing Casserole combines tender chicken breast pieces baked under a creamy soup layer and topped with savory stuffing moistened with chicken broth. It’s a hearty, easy-to-make dish perfect for weeknight dinners or family gatherings.

Ingredients

Scale

Chicken

  • 1 1/2 pounds chicken breast, cut into bite-sized pieces
  • Salt and Pepper, to taste

Sauce

  • 2 (10 oz) cans cream soup (cream of mushroom or cream of chicken)
  • 1/2 cup milk

Stuffing

  • 6 oz stuffing mix (such as Stovetop)
  • 1 1/2 cups chicken broth

Instructions

  1. Preheat the oven: Set your oven to 375º F and spray a casserole dish with non-stick spray to prevent sticking.
  2. Prepare the chicken: Season the bite-sized chicken breast pieces with salt and pepper and arrange them evenly in the bottom of the prepared casserole dish.
  3. Mix the creamy sauce: In a bowl, combine the cream soup and milk, stirring until smooth and fully blended. Pour this mixture evenly over the chicken, spreading it to form an even layer.
  4. Add the stuffing: Spread the stuffing mix evenly on top of the creamy chicken layer. Then, drizzle the chicken broth over the stuffing just enough to moisten it.
  5. Bake covered: Cover the casserole dish tightly with foil and bake in the preheated oven for 30 minutes to cook the chicken through and hydrate the stuffing.
  6. Bake uncovered: Remove the foil and bake for an additional 10-15 minutes until the stuffing is golden brown and crispy on top.
  7. Serve: Remove the casserole from the oven and serve immediately while hot.

Notes

  • You can use either cream of mushroom or cream of chicken soup, depending on your preference.
  • If you prefer extra crispy topping, broil the casserole for 2-3 minutes after baking uncovered, watching carefully to avoid burning.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated thoroughly before serving.
  • For reduced sodium, use low-sodium soup and broth varieties.
  • Adding sautéed vegetables like mushrooms or green beans can boost nutrition and flavor.
