Ingredients

Scale

Wrap and Filling Ingredients

  • 2 large tortillas (regular or low-carb/high-protein)
  • 7 oz cooked chicken (about 200 grams, chopped; rotisserie chicken works great)
  • 2 garlic cloves (minced or grated, adjust to taste)
  • 2 tablespoons light mayonnaise
  • 1 tablespoon light Greek yogurt (or plain yogurt)
  • 2 teaspoons hot sauce (such as Frank’s)
  • ¼ teaspoon salt
  • 3 oz grated cheese (about 90 grams; use cheddar blend preferred)
  • 1 green onion (chopped)
  • Olive oil spray

Instructions

  1. Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek yogurt, hot sauce, and salt. Mix thoroughly to ensure all ingredients are well incorporated, forming a flavorful chicken filling.
  2. Lay out wrap: Place a tortilla flat on your work surface. On the lower third portion of the tortilla, sprinkle about 2 tablespoons of grated cheese evenly. Then, spoon approximately ⅔ cup of the prepared chicken mixture over the cheese. Add another tablespoon of grated cheese on top of the chicken mix and sprinkle some chopped green onion for fresh flavor.
  3. Fold wrap: Fold the sides of the tortilla inward over the filling to secure it. Then, carefully roll up the wrap tightly from the bottom, ensuring the filling is enclosed and the seam is sealed for cooking.
  4. Prepare pan: Heat a non-stick skillet over medium-high heat. Once hot, spray lightly with olive oil to prevent sticking and help achieve a crisp wrap exterior.
  5. Cook wraps: Place the rolled wraps seam-side down onto the skillet. Cook for 3 to 4 minutes on each side, or until the wrap turns crispy and golden brown. Covering the pan with a lid during cooking helps heat the filling thoroughly and melts the cheese inside.
  6. Slice and serve: Remove the wraps from the pan, slice each in half diagonally, and serve immediately while warm and melty.

Notes

  • You can use rotisserie chicken to save time or any leftover cooked chicken.
  • Adjust the amount of garlic and hot sauce according to your taste preference.
  • Using light mayonnaise and Greek yogurt keeps the dish lighter but still creamy.
  • Make sure to cook the wraps seam-side down first to help them hold together.
  • Covering the pan while cooking helps the cheese melt inside the wrap.
  • Serve with a side salad or fresh veggies for a complete meal.
