Instructions
- Brown the Beef: Add 1 pound ground beef to a medium skillet or cast iron pan and cook over medium heat until fully cooked and no pink remains. Drain excess fat, leaving approximately 1 tablespoon of fat in the pan, then remove the beef from the pan.
- Sauté Onions: Add ½ cup diced onion to the remaining beef fat in the pan. Cook over medium heat for 3-4 minutes, stirring occasionally, until the onions become tender and translucent.
- Combine Ingredients: Return the cooked beef to the pan with the onions. Add 1 (14.5-ounce) can of petite diced tomatoes and 4 teaspoons dill relish. Stir well to combine and cook for about 2 minutes until everything is heated through.
- Melt the Cheeses: Cut ½ pound Velveeta cheese and 4 ounces cream cheese into cubes and add to the beef mixture. Cook over medium heat, stirring frequently, until all the cheese has completely melted and the mixture is creamy. Season with salt and ground black pepper to taste.
- Serve: Transfer the dip to a serving dish. Top with shredded lettuce, caramelized grilled onions, and diced cherry tomatoes. Serve warm with bread, crackers, or your favorite dipping items.

- This dip can be kept warm in a slow cooker on the low setting for parties.
