Steak and Butter
- 4 tablespoons butter (divided in half)
- 1 tablespoon olive oil
- 1 ½ pounds sirloin steak (cut into 1 inch chunks)
Potatoes and Seasonings
- 1 pound Yukon Gold or red potatoes (cut into 1/2 inch chunks)
- 4 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the skillet: Heat a cast iron or non-stick skillet over medium-high heat to prepare it for cooking.
- Melt butter and heat oil: Add 2 tablespoons of butter and 1 tablespoon of olive oil to the pan and heat until the butter fully melts.
- Add potatoes and seasonings: Add the potatoes, minced garlic, dried oregano, dried rosemary, salt, and pepper to the skillet, combining well.
- Cook potatoes first side: Let the potatoes cook undisturbed for about 4-5 minutes to get a good sear.

- Stir and finish cooking steak: Stir the steak and cook for an additional 1-2 minutes or until the steak reaches your desired level of doneness.
- Combine steak and potatoes: Remove the skillet from heat, add back the garlic herb potatoes, and toss them with the cooked steak to combine flavors.
- Garnish and serve: Optionally top with fresh chopped parsley before serving for a fresh herbal note.
