Ingredients

Scale

For the Mahi Mahi and Sauce

  • 1 tablespoon olive oil
  • 4 mahi mahi fish filets
  • Salt, to taste
  • Ground black pepper, to taste
  • 6 tablespoons unsalted butter
  • 3 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

For the Avocado Salsa

  • 1 large diced avocado (about 1 cup)
  • 1 diced Roma tomato (about ½ cup)
  • ¼ cup diced red onion
  • ½ cup corn (fresh or thawed if frozen)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon finely chopped fresh cilantro
  • ⅛ teaspoon salt

Instructions

  1. Heat the Skillet: Place a large 12 or 14-inch skillet over medium-high heat and add 1 tablespoon of olive oil to warm.
  2. Season and Cook Fish: Season the 4 mahi mahi filets with salt and ground black pepper on both sides. Add them to the hot skillet and cook for 4-5 minutes per side until they develop a golden crust and reach an internal temperature of 145°F.
  3. Remove Fish: Carefully remove the cooked fish from the skillet and set them aside on a plate to keep warm.
  4. Brown the Butter: Reduce the heat to medium-low, add 6 tablespoons of unsalted butter to the same skillet, and swirl occasionally. Continue cooking until the butter turns light brown and emits a nutty aroma, indicating it is browned.
  5. Make Brown Butter Lime Sauce: Turn off the heat and whisk into the browned butter 3 tablespoons fresh lime juice, 1 teaspoon honey, 1 teaspoon minced garlic, ½ teaspoon salt, and ½ teaspoon ground black pepper until well combined.
  6. Rewarm Fish in Sauce: Return the mahi mahi filets to the skillet and spoon the brown butter lime sauce over them. Warm the fish on medium-low heat until heated through and well coated.
  7. Prepare Avocado Salsa: In a medium bowl, gently combine the diced avocado, diced Roma tomato, diced red onion, corn, 1 tablespoon fresh lime juice, finely chopped fresh cilantro, and ⅛ teaspoon salt. Mix carefully to combine without mashing the avocado.
  8. Serve: Plate the mahi mahi fillets and generously top each with the fresh avocado salsa. Serve immediately for best flavor and texture.

Notes

  • Ensure the butter does not burn while browning; remove from heat promptly when it turns a golden brown and smells nutty.
  • Use fresh lime juice for the best bright, tangy flavor in both the sauce and salsa.
  • Serve with steamed rice or a light salad for a complete meal.
  • If corn is not in season, canned or frozen corn can be used after thawing and draining.
  • To check fish doneness, use a meat thermometer for accuracy: mahi mahi is done at 145°F internal temperature.
