  • 1/2 medium onion, chopped
  • 3/4 cup chicken broth (low sodium preferred)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • 12 tablespoons chopped parsley (optional)

Instructions

  1. Prepare the chicken: Cut the chicken breasts lengthwise into 4 thinner pieces. Season each piece evenly with garlic powder, salt, and pepper to enhance the flavor.
  2. Cook the chicken: Heat olive oil and butter in a skillet over medium-high heat until hot. Add the chicken pieces and cook for 5-6 minutes on each side, or until fully cooked through and nicely browned. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté the onions: In the same skillet, add the chopped onions. Sauté for about 5 minutes until the onions are softened and lightly browned. If the skillet gets dry, add a little extra olive oil to prevent sticking.
  4. Make the sauce: Pour the chicken broth into the skillet with the onions, then add the softened Boursin cheese. Stir continuously until the cheese melts and the sauce becomes smooth. Let the sauce simmer and bubble gently for 5 minutes to thicken and develop flavor. Stir in chopped parsley if using.
  5. Combine and warm through: Return the cooked chicken along with any juices from the plate back into the skillet with the sauce. Let the chicken warm through for a couple of minutes. If the sauce is too thick, add a splash more chicken broth to reach desired consistency.
  6. Final seasoning and serve: Taste the sauce and season with additional salt and pepper if necessary (depending on your broth’s saltiness). Serve immediately with your choice of sides.
