  • Author: Isabella
  • Total Time: 15 minutes
  • Yield: Approximately 24 cupcake servings 1x

Description

This Berry Buttercream Frosting is a luscious and vibrant frosting made by blending fresh blackberries, strawberries, and blueberries with creamy butter and powdered sugar. Perfect for topping cupcakes or cakes, it adds a natural fruity sweetness and a beautiful pastel hue to your baked treats. Topped with fresh mixed berries, it offers a delightful, fresh finish that’s both visually appealing and delicious.

Ingredients

Scale

Berry Puree

  • 1/2 cup blackberries
  • 1/2 cup strawberries
  • 1/2 cup blueberries

Frosting

  • 1 1/2 cups butter (3 sticks), softened
  • 6 cups powdered sugar
  • 1/2 cup berry puree (from above, adjust as needed)

Topping

  • Fresh berries (blackberries, strawberries, blueberries, and raspberries), for garnish

Instructions

  1. Prepare the berry puree: Begin by pureeing the blackberries, strawberries, and blueberries in a blender or food processor until smooth. Pour the puree into a bowl and set aside.
  2. Make the frosting: In a mixing bowl, add the softened butter, powdered sugar, and half a cup of the berry puree. Blend using a hand mixer or stand mixer until the mixture is smooth and creamy. Adjust the amount of berry puree by adding more if a thinner frosting is desired, or less for a thicker consistency.
  3. Frost the cupcakes: Spread the berry buttercream frosting evenly onto cooled cupcakes using a spatula or piping bag.
  4. Add fresh berries: Just before serving, top the frosted cupcakes with an assortment of fresh berries such as blackberries, strawberries, blueberries, and raspberries to enhance the flavor and presentation. Enjoy!

Notes

  • Ensure the cupcakes are completely cooled before applying frosting to prevent melting.
  • Adjust the sweetness by adding more or less powdered sugar based on your preference.
  • For a smoother frosting, strain the berry puree to remove seeds before mixing.
  • Store frosted cupcakes in the refrigerator to keep the buttercream fresh.
  • This frosting works great on vanilla, lemon, or berry-flavored cupcakes.
