Bell Peppers
- 5 bell peppers, quartered or cut into large strips (a mix of red, orange, and yellow)
Seasoning for Peppers
- 1 1/2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Marinade
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon fresh thyme, plus extra for serving
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat Grill: Preheat an outdoor grill or grill pan to medium-high heat to ensure the peppers cook evenly and develop nice grill marks.
- Prepare Peppers: Place the quartered or sliced bell peppers into a medium bowl. Add 1 1/2 tablespoons of olive oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Toss thoroughly to coat the peppers evenly with the seasoning.
- Grill Peppers: Arrange the peppers on the hot grill or grill pan. Grill each side for about 4-5 minutes until grill marks appear and the peppers reach your desired tenderness.
- Make Marinade: While the peppers are grilling, whisk together balsamic vinegar, 2 tablespoons olive oil, Dijon mustard, minced garlic, 1 teaspoon fresh thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a medium bowl until fully combined.
- Marinate Peppers: Once the peppers are grilled, immediately toss them in the marinade. Let them sit at room temperature for approximately 15 minutes to absorb the flavors thoroughly.
- Serve: Sprinkle the marinated peppers with extra fresh thyme before serving as a delightful side dish or appetizer.
