Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups flour
  • 2/3 cup freeze dried strawberries or raspberries, ground into a powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar

Wet Ingredients

  • 1 large egg
  • 2 tablespoons melted coconut oil
  • 1/2 cup raspberries, mashed (or strawberries, pureed)
  • 2 teaspoons vanilla extract
  • 1/2 cup rosé
  • 1/4 cup plain Greek yogurt
  • 1/4 cup unsweetened vanilla almond milk (or any milk substitute)

Glaze and Garnish

  • 2 cups powdered sugar
  • 2 tablespoons freeze dried strawberries or raspberries, ground into a powder
  • 2 tablespoons milk or cream
  • 3 tablespoons rosé
  • Extra freeze dried strawberries/raspberries for garnish

Instructions

  1. Preheat and prepare the pan: Preheat your oven to 350℉. Lightly spray a standard donut pan with nonstick spray to ensure easy removal after baking.
  2. Mix dry ingredients: In a medium bowl, whisk together the flour, ground freeze-dried berries, baking powder, baking soda, and salt to ensure they are evenly combined.
  3. Mix wet ingredients: In a separate bowl, whisk the sugar, egg, melted coconut oil, mashed raspberries or pureed strawberries, vanilla extract, rosé, Greek yogurt, and almond milk until the mixture is smooth and homogenous.
  4. Combine wet and dry: Add the dry ingredients to the wet ingredients and gently stir until just combined, being careful not to overmix to keep the donuts tender.
  5. Fill the molds and bake: Spoon the batter into the prepared donut molds, filling each about three-quarters full. Bake for 10-12 minutes, or until the edges turn golden and a toothpick inserted into a donut comes out clean. Remove from oven and allow to cool in the pan for a few minutes before transferring to a wire rack.
  6. Prepare the glaze: While the donuts cool, whisk together powdered sugar, ground freeze dried berries, milk or cream, and rosé in a medium bowl until smooth and pourable.
  7. Glaze and garnish the donuts: Once the donuts are completely cool, dip the tops into the glaze. Garnish immediately with extra crushed freeze dried berries for added color and flavor.
  8. Serve and enjoy: Let the glaze set for a few minutes before serving. Enjoy these delicate rosé-infused donuts fresh for the best flavor and texture.

Notes

  • Freeze dried berries are essential to maintain the concentrated berry flavor without adding moisture to the batter.
  • You can substitute almond milk with any milk of your choice, including dairy milk.
  • Ensure donuts are fully cooled before glazing to prevent the glaze from melting off.
  • For a non-alcoholic version, substitute rosé with cranberry juice or sparkling water with a splash of berry syrup.
  • Donuts are best consumed within 1-2 days for optimal freshness.
