Instructions

  1. Prepare the base mixture: Line a rimmed baking sheet with a silicone baking mat. In a food processor, combine almond butter, soaked and drained dates, 2 tablespoons melted coconut oil, oats, unsweetened flaked coconut, vanilla extract, almond extract, and salt. Process until everything is well combined and the mixture sticks together when pressed between your fingers.
  2. Form the bites: Use a medium cookie scoop to portion the mixture into 17 even portions. Roll each portion into a ball and arrange them on the prepared baking sheet.
  3. Freeze to set: Place the baking sheet with the rolled bites in the freezer for 30 minutes to firm up.
  4. Melt the chocolate: In a microwave-safe dish, combine dark chocolate chips and 1 teaspoon coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  5. Coat the energy bites: Either drizzle the melted chocolate over each bite or dunk each bite into the chocolate. Place the coated bites back on the baking sheet.
  6. Freeze again: Return the chocolate-coated bites to the freezer for another 30 minutes to allow the chocolate to harden.
