Chocolate Coating

Instructions
- Prepare the base mixture: Line a rimmed baking sheet with a silicone baking mat. In a food processor, combine almond butter, soaked and drained dates, 2 tablespoons melted coconut oil, oats, unsweetened flaked coconut, vanilla extract, almond extract, and salt. Process until everything is well combined and the mixture sticks together when pressed between your fingers.
- Form the bites: Use a medium cookie scoop to portion the mixture into 17 even portions. Roll each portion into a ball and arrange them on the prepared baking sheet.
- Freeze to set: Place the baking sheet with the rolled bites in the freezer for 30 minutes to firm up.
- Melt the chocolate: In a microwave-safe dish, combine dark chocolate chips and 1 teaspoon coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Coat the energy bites: Either drizzle the melted chocolate over each bite or dunk each bite into the chocolate. Place the coated bites back on the baking sheet.
- Freeze again: Return the chocolate-coated bites to the freezer for another 30 minutes to allow the chocolate to harden.
- Storage: Store the Almond Joy Energy Bites in a sealed airtight container in the refrigerator to keep them fresh and firm.
