- 300 g pork mince
- 1 white onion, finely sliced
- 3 garlic cloves, minced
- 1 inch ginger, minced
- 1/4 cabbage, finely chopped
- 2 carrots, finely sliced into 1 inch batons
- 2 sticks celery, finely sliced into 1 inch batons
- 100 g shiitake mushrooms, finely sliced
- 1 tbsp light soy sauce
- 1 tbsp sesame oil
- 2 tbsp oyster sauce
- 1 tbsp vegetable oil (for frying)
Wrapping
- 16 rice paper wrappers
- 2 tbsp sweet chilli sauce (for serving)
Instructions
- Prepare the filling: Heat 1 tbsp vegetable oil in a large frying pan or wok over medium-high heat. Add the sliced onion and fry for a couple of minutes, stirring frequently.
- Cook the pork: Add the pork mince to the pan and break it apart with a spatula. Fry for about 10 minutes, stirring occasionally until browned and excess liquid evaporates.
- Add aromatics and vegetables: Stir in minced garlic and ginger, frying for 1 minute. Add carrot, cabbage, and shiitake mushrooms and cook for 2 minutes. Lastly, add celery and stir fry briefly.
- Season the filling: Pour in soy sauce, sesame oil, and oyster sauce. Stir fry everything together for 2 minutes. Taste and adjust seasoning with additional sauces, salt, or pepper if needed. Transfer filling to a large plate and chill in the fridge for 10 minutes.
- Soften rice paper wrappers: Fill a large plate or bowl with warm water. Dip one rice paper wrapper into the water for 2 seconds to soften, then place onto a clean chopping board.
- Assemble the rolls: Place about 2 tablespoons of cooled filling approximately 2 inches from the bottom edge of the wrapper. When the wrapper becomes slightly sticky (10–20 seconds), fold the base over the filling, then fold in the sides and roll tightly into a cylinder.
- Wrap each roll with a second wrapper: To ensure the rolls don’t break during air frying, wrap each rice paper roll with an additional rice paper wrapper. Repeat for all rolls.
- Air fry the rolls: Arrange the rice paper rolls in the air fryer basket so they are not touching. Cook at 200°C (390°F) for 10 minutes, monitoring closely to prevent burning until they are crispy and golden.
- Serve: Remove the rolls from the air fryer and serve hot with sweet chilli sauce for dipping. Enjoy your crispy, savory rice paper rolls!

- Make sure the filling is cooled before rolling to prevent tearing the rice paper.
