  • Yield: 12 servings 1x

Description

This classic 7-Up Cake is a moist and tangy lemon-flavored bundt cake made with yellow cake mix, instant lemon pudding, and 7-Up soda. It features a light lemon glaze that adds a perfect sweet and citrusy finish, making it an irresistible dessert for any occasion.

Ingredients

Scale

Cake Ingredients

  • 15.25 ounces yellow cake mix
  • 3.4 ounces instant lemon pudding mix
  • 7.5 ounce can 7-Up (approximately 1 cup)
  • 4 eggs, room temperature
  • ¾ cup vegetable oil

Glaze Ingredients

  • 2 cups powdered sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons whole milk

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F. Grease a 9-inch (10-cup) bundt cake pan thoroughly with nonstick cooking spray and set it aside to get ready for the batter.
  2. Mix Dry Ingredients: In a medium bowl, combine the yellow cake mix with the instant lemon pudding mix. Stir well to ensure they are evenly mixed, which helps to distribute flavors and texture evenly throughout the cake.
  3. Combine Batter: Using a stand mixer or hand mixer on medium-high speed, beat together the cake and pudding mixture, 7-Up soda, eggs, and vegetable oil. Continue mixing for about 2 minutes to create a smooth, well-incorporated batter.
  4. Bake the Cake: Pour the batter into the prepared bundt pan. Place in the oven and bake for approximately 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Once done, remove from oven, allow to cool for 15 minutes, then carefully turn out onto a wire rack to cool completely.
  5. Prepare and Apply Glaze: In a small bowl, whisk together powdered sugar and lemon juice. Gradually add the milk a little at a time until the glaze is thin enough to drizzle. Drizzle the glaze evenly over the cooled cake for a sweet and tangy finish.

Notes

  • Make sure the eggs are at room temperature for better batter mixing and cake texture.
  • You can substitute 7-Up with any lemon-lime soda of your choice if unavailable.
  • For a stronger lemon flavor, zest one lemon and add it to the batter or glaze.
  • Store cake in an airtight container at room temperature for up to 3 days or refrigerate to extend freshness.
  • If glaze is too thick, add more milk; if too thin, add more powdered sugar to adjust consistency.
